One of my favorite times of year to get fresh fruit is summer, when melons have been ripened by the sun, are as juicy as they can be and are ready to be picked! I took advantage of this season’s bounty when I made this summer melon board – my take on a caprese salad – and created a river with fruit, cheese and fresh herbs. It was such a pretty presentation and my family loved making their own fruit skewers with a selection of melon cut into spheres and arranged on a platter to look like a creek winding down the mountain with plants and trees along the way! I got out my trusty melon baller and formed spheres using a variety of summer melons:
- Watermleon
- Honeydew
- Cantelope
- Canary Melon
I also added some veggies and other fruit:
- Cherry Tomatoes
- English Cucumbers
- Mission Figs
- Peaches
For the cheese, herbs, dressings and seasonings:
- Bocconcini (mozzarella balls)
- Feta cheese
- Basil
- Mint
- Honey-Lime Vinaigrette (juice and zest of 1 lime, 1 tsp honey, 1 tbsp white balsamic or champagne vinegar, 2 tbsp olive oil, salt & pepper to taste)
- Aged Balsamic Vinegar
- Sea Salt Flakes
- Himalayan Salt
