8 Row Chopped Salad

You’ve probably seen multiple versions of this salad, but it never disappoints. I call it my 8 Row Chopped Salad. Great for parties, lunches, showers, brunches, dinners, it’s also super versatile – you can make this recipe your own for sure! Here’s my version that I used for a recent dinner party:


  • 1 cup cooked Israeli couscous
  • 3 cups chopped arugula
  • 2 cups dried sweet corn
  • 2 cups diced roma tomatoes
  • 1 cup shelled pistachios
  • 1 cup dried blueberries
  • 1 cup diced asiago cheese
  • 2 cups chopped chicken or diced smoked salmon


  • ¼ c. basil pesto
  • ½ c. mayo
  • 1 shallot
  • ½ c. buttermilk
  • juice of one lemon
  • salt & pepper to taste

Arrange all salad ingredients in rows on a large platter, alternating colors. Place all dressing ingredients in a blender to blend. Add to salad after presentation, toss.

Serves 8-10

Tip: Trader Joe’s Green Goddess dressing is great with this if you’re in a pinch and can’t make the dressing. Rotiserie chicken works well too!
