You’ve probably seen multiple versions of this salad, but it never disappoints. I call it my 8 Row Chopped Salad. Great for parties, lunches, showers, brunches, dinners, it’s also super versatile – you can make this recipe your own for sure! Here’s my version that I used for recent dinner party:
Salad:
- 1 cup cooked Israeli couscous
- 3 cups chopped arugula
- 2 cups dried sweet corn
- 2 cups diced roma tomatoes
- 1 cup shelled pistachios
- 1 cup dried blueberries
- 1 cup diced asiago cheese
- 2 cups chopped chicken or diced smoked salmon
Dressing:
- ¼ c. basil pesto
- ½ c. mayo
- 1 shallot
- ½ c. buttermilk
- juice of one lemon
- salt & pepper to taste
Arrange all salad ingredients in rows on a large platter, alternating colors. Place all dressing ingredients in a blender to blend. Add to salad after presentation, toss. This 8 Row Chopped Salad serves 8-10.
Tip: Trader Joe’s Green Goddess dressing is great with this if you’re in a pinch and can’t make the dressing. Rotiserie chicken works well too!
