Halibut en Papillote

A light, French-Mediterranean dish, perfect for summer entertaining. Let guests prepare their own packets, write their names on top and unwrap their creations right at the dinner table!

Equipment

  • 4 sheets parchment paper

Ingredients

  • 4 TB olive oil
  • 4 fresh halibut filets, 1-1.5” each
  • Handful thyme sprigs
  • 1 lemon, thinly sliced
  • 1 cup diced zucchini
  • 1 cup small cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • salt & freshly ground pepper
  • 1 lemon, cut into wedges for serving
  • 1 shallot, thinly sliced
  • dash of white wine

Instructions

  • Preheat oven to 350 degrees.
  • Lay parchment paper down and place 3 slices of lemon in the middle of the sheet, followed by shallot slices.
  • Place the halibut on top of the lemon & shallot slices. Drizzle with 1 TB of olive oil, sprinkle with salt & pepper, and add thyme sprigs on top.
  • Surround fish with zucchini and tomatoes. Approx 1/2 cup per entree. Add a dash of white wine here if desired.
  • Pull parchment paper up around fish, fold over sides, then twist ends to seal each packet. If guests are preparing their own, write their names on the top of each packet.
  • Place packets on a baking sheet. Bake for 15-20 minutes.
  • Let sit for a few minutes, then slowly open packets. Be careful of steam! Serve with lemon wedges.

This is one of my favorite dishes to serve if I am entertaining in the summer. I love to let my guests create their own custom creations and then they unwrap their culinary surprise right at the dinner table!
