Christmas Potatoes

Cheesy, creamy and crunchy with a corn flake topping, this decadent comfort food side dish makes a great accompaniment to a brunch or homestyle dinner.

  • 32 oz package frozen, shredded hash browns, thawed
  • 1/2 cup melted better
  • 1 can cream of chicken soup
  • 12 oz grated cheddar cheese
  • 8 oz sour cream
  • 1 tsp salt
  • 1/2 small onion, chopped
  • 2 cups crushed corn flakes
  • 1/2 cup additional melted butter


  • Preheat oven to 350 degrees.
  • Put thawed potatoes in 9 x 13 serving dish, or if serving individually, put in large bowl.
  • Mix next 6 ingredients, pour over potatoes. If serving indivudually, fill each dish evenly.
  • Top with corn flakes.
  • Drizzle butter over potatoes.
  • Bake uncovered for 45 minutes if in large pan. If serving in individual dishes, bake unconvered for about 20-30 minutes or until bubbly and corn flakes are golden brown.
